Recommended recipe for 12 pieces:
- 1 package 150 g fiber blend,
- 4 large eggs (~ 230 g),
- 20-30 g oil, or melted butter
- 150 g sweetener or after taste, (erythritol or some 0-calorie sweetener)
- 170 g water
Method: Place the whole eggs in a bowl and add the oil, water, and sweetener. Mix well. Add the fiber blend to the wet ingredients and incorporate it until the mixture is even. Divide the mixture into 12 portions and place each portion in a muffin baking paper form (previously sprayed with oil to prevent sticking). Preheat the oven to 180°C (350°F). Bake the muffins for 30-35 minutes or until a toothpick inserted into the center comes out clean.
