Fiber Baker's mixutre for bread slices with fried onion/ Keto; Paleo; Glutenfree; Starch free; Soy free; Cereal free
Ingredients: dietary fibers (cellulose) Thickener: psyllium husk, konjac gum, xanthan gum, tara gum; Flavoring: Air dried fried onion flakes; Raising agent: sodium bicarbonate, dried yeast, Acidity regulator: GDL (glucono delta-lactone), ascorbic acid; Sweetener: erythritol; salt.
Recommended recipe for bread slices for a ~ 30 cm x 25 cm / 35 x 30 cm baking tray (depending of the desired thickness)
- 165 g fiber blend,
- 2 large eggs (110 g),
- 1 egg white (45 g)
- 30 ml oil,
- 260 ml water
Method: Put the whole eggs and the egg white in a bowl, add the oil and water, and mix well. Add the fiber blend to the wet ingredients and incorporate until the mixture is even. Then place the dough on baking paper and shape it with wet hands or a silicone rolling pin to the desired thickness (ideally 0.8 – 1.5 cm, depending on taste for a thinner or thicker slice). Prick it in several places and let it rise for about 30 minutes in a warm place. Then put it in a preheated oven (170°C) and bake for 25-35 minutes, or until it passes the toothpick test. After it has cooled down, cut it into cubes of your choice. Ideal for sandwiches and as a bread replacement.
