These scrumptious pizza swirls are not only delicious but also a rich source of fiber, ensuring prolonged satiety. And if that’s not enough, they are low in carbs, low in energy, and gluten-free too! Enjoy a guilt-free treat that’s perfect for any meal or snack.

Ingredients for dough:

  • 70 g Fiber Baker fiber mix + 1 teaspoon
  • 75 ml water (or kefir)
  • 4 g yeast (powder)
  • 20 ml grape seed oil or coconut oil
  • 2 whole eggs
  • Thyme and garlic (fresh or dried, granulated) + salt to taste

Ingredients for sauce:

  • 1 small onion
  • 3-4 pieces of champignon mushrooms (or finely chopped chicken breast, bacon, or ham)
  • 2-3 tablespoon of tomato paste (and a little water if the paste is too thick)
  • 10 ml lard or coconut oil
  • Italian seasoning or thyme and garlic (fresh or dried, granulated) + salt to taste

Instructions:

  1. Prepare the Dough:
    • Gather and measure all ingredients.
    • Mix the dry ingredients first. Then add the beaten eggs, water, and oil.
    • Knead the dough well and let it rest covered while you prepare the mushroom-tomato sauce.
  2. Make the Sauce:
    • Finely chop one small onion and sauté it.
    • Add 3-4 finely chopped champignon mushrooms, salt, and Italian seasoning.
    • You can use finely chopped chicken breast, bacon, or ham as well—whatever you prefer!
    • After a few minutes, add 2-3 tablespoons of tomato paste and a teaspoon of fiber mix.
    • Stir and let it sit until the sauce thickens (the fiber mix absorbs the moisture).
  3. Assemble and Bake:
    • Roll out the rested dough, spread the tomato sauce evenly, and roll it up.
    • Sprinkle with cheese if you consume dairy.
    • Bake in a preheated oven at 180°C for about 20 minutes.
