Ingredients for 2 Muffins:

  • 20 g Fiber Baker’s Multipurpose fiber mixture
  • 1 Large Egg (55-60 g)
  • 5 g Melted Butter
  • 1 tsp Sweetener (we use erythritol)
  • 1/4 tsp Baking Powder
  • A pinch of Salt
  • 1-2 tbsp Water (adjust based on egg size; use more water for smaller eggs and less for larger eggs)

Instructions:

  1. Mix the Fiber Baker’s Multipurpose fiber mixture, sweetener, salt, and baking powder. Add the egg, water, and melted butter. Stir well until combined.
  2. Rather than heating up the oven for just a couple of muffins, use a compact grill for a faster and more energy-efficient option. (Our compact grill doubles as a sandwich maker with top and bottom heating plates.)
  3. After mixing the dough, preheat your compact grill. While it's heating up, divide the dough into 2 parts and shape them into disks with wet or oiled hands.
  4. Once the grill is ready, lightly coat it with oil spray or melted butter. Place the disks side by side, leaving space for them to expand. Cook for 5-7 minutes until golden and cooked through. If the grill surface is small, cook one at a time. Once cooked, slice them in half and fill with your favorite toppings – sweet or savory.
  5. One muffin, filled with roasted bacon and veggies or your choice of filling, is perfect to satisfy our average appetite and keeps us full for hours.
