Microwave Magic: Quick and Healthy 20 cm Round Cake Recipe

Start with the Cream:

Ingredients:

  • 100 g cream powder
  • Liquid quantity as mentioned on the powder's package
  • For a firmer cream, use yogurt with 20% or 30% heavy cream.

Note: If using different liquids for the cream—milk & yogurt, heavy cream & yogurt, or heavy cream & cooking cream—ensure you mix the ingredients to a homogeneous liquid.

Method:

  1. Place your chosen cream powder in a bowl.
  2. Start whisking continuously with a hand mixer at medium speed while gradually adding the liquid. Maintain a steady pace—neither too quick nor too slow.
  3. Continue until all the liquid is incorporated.
  4. Refrigerate the cream to let it firm up while you prepare the cake layers.

Cake Layers:

Ingredients:

  • 5 large eggs (275 g)
  • 25-30 g water
  • 20-30 g melted butter
  • 1 package or 85 g fiber blend
  • 130-150 g sweetener (to taste)

Method:

  1. In a bowl, combine the whole eggs, water, and melted butter until homogeneous.
  2. Mix the cake fiber blend with the sweetener and add to the egg mixture. Combine until smooth.
  3. You will have approximately 500g of dough. Divide it into three equal parts.

Baking:

  1. Oil a 20 cm diameter baking form (silicone or glass).
  2. Spread one part of the dough evenly in the form.
  3. Microwave at 800 watts for 4 minutes.
  4. After removing the cake layer, keep the microwave door open between baking each layer to allow the steam to escape. Then, place the cake on a rack.
  5. Re-oil the form if needed, and repeat the baking steps for the remaining two layers.

Assembly:

  1. Let the layers cool down in a cold place—they cool quickly!
  2. Optionally, sprinkle the layers with juice for a moist cake, though this light sponge cake can stand on its own.
  3. Spread one-third of the cream on the first layer, then add the second layer. Repeat until all layers are assembled.
  4. Use the remaining cream to cover and decorate the cake as desired.
